To prepare a homemade Mix Grill tray like restaurants, we combine kofta, chicken, and lamb with an authentic charcoal-grilled finish.

Components of the Perfect Mix Grill

Hawawshi Kofta:
Prepared as explained earlier using minced meat, fat, and baking powder for a soft and juicy texture.

Chicken Shish Tawook:
Chicken breast cubes marinated in yogurt, mustard, paprika, and spices for tenderness and flavor.

Lamb Chops (or Grilled Ribs):
Marinated simply with onion water, black pepper, and a pinch of nutmeg to preserve the natural lamb flavor.

AMS Mix Grill Secret Marinade:
Use strained onion juice mixed with tomato juice as a base marinade for both meat and chicken. This helps prevent burning and gives a beautiful golden color during grilling.

Grilling Order (Important for Perfect Cooking):

  1. Lamb first (needs the longest cooking time)

  2. Chicken next

  3. Kofta last (cooks quickly and should not be overexposed to high heat)

Cooking Method at Home:
If charcoal grill is not available, grill each item on a very hot grill pan brushed lightly with oil.

Once all items are cooked, arrange them together in one serving tray.

Final Touch (Smoky Aroma Secret):
Place a small piece of burning charcoal in a foil cup in the center of the tray. Drizzle a spoon of melted meat fat or a few drops of oil over it, then immediately cover the tray tightly with foil for 10 minutes. This infuses the entire mix with a rich smoky barbecue aroma.
